Breakfast 1: Waffles

This morning I had my first snafu in the kitchen. I was set to make my uncle's Swedish Pancakes, however we have somehow managed to misplace our griddle and that meant that I could no longer make the pancakes. Therefore, I had to dump out the batter I had just made and come up with something on the fly. I took to my cook books and found a quick waffle recipe, which, thankfully, turned out to be pretty good. This was a good lesson in working on your toes and also taught me to check for all equipment before starting to cook (this is what it means to learn something the hard way).

I made a blackberry compote prior to the disastrous discovery and I spent so much time on it that the thought of tossing it out too was unthinkable, but it paired with the waffles well and made my life easier because it meant I didn't have redo everything. In the end one can never really go wrong with fresh fruit and waffles.

Recipe:

Quick Waffles

2 cups flour
1/2 tsp salt
3 tsp baking powder
1 1/2 cups milk
2 eggs
4 tbsp butter, melted and cooled
1/2 tsp vanilla extract

1.) Whisk all ingredients together. Spread evenly on a heated waffle iron. Serve

Blackberry Compote

1 1/2 cups blackberries
3/4 cup orange juice
2 1/2 tsp cornstarch
1/2 cup sugar
Pinch cinnamon

1.) In a small bowl combine 2 tbsp of the orange juice with the cornstarch.
2.) Put the berries in a small saucepan with the sugar, the remaining orange juice, the cinnamon. Bring to a simmer over low heat and continue simmering 1 minute.
3.) Stir the cornstarch mixture and add it to the compote. Simmer, stirring, until thickened, about 3 minutes. Serve warm.

Meal 17: Chicken Paella

Ah, paella. A meal that, when eaten, conjures the dulcet sounds of a Spanish guitar wafting through an open widow on a warm summer's eve in Barcelona. Maybe that's hyperbolic, but I just really enjoy paella as both a concept and a food; it is the Iberian cousin of risotto (one of my other favs) while also having a flavor profile that is so uniquely "paella".
